Here is a recipe to make the mostdelicious chicken dumplings at home.Ingredients:6 boned chicken breast with skin, 10cups water, 1 tsp sage, 1 tsp poultry, 1/8tsp grounded basil leaves, 1 tbsp salt andpepper.Method:Put these ingredients in a largesauce pan to simmer over low heat, untilthe chicken is done. Then remove thechicken and remove the skin. While thechicken is cooking, make the dumplings.Ingredients (for dumplings):5 cups of all purpose flour, 1/2 cupshortening (or desi ghee), 1/4 tsp salt, 1beaten egg and some water.Method (for dumplings):Put flour into a mixing bowl and stirin salt. Work in shortening as you wouldwhen making pie crust, using two knivesor a pastry cutter. Add egg, working itinto the dough. Then stir in cold water1/2 cup at a time, until the dough comestogether and is at a stage where youwill be able to roll it out. Lightly floura surface and roll out the dough to a pieshell thickness (about 1/8 inch). Using apizza cutter, cut the dough into 1/2 to 1inch squares. Finally, put the squares intothe chicken broth and cook until done(about 30 minutes). Return the chickento the soup with the dumplings to cookanother 15 minutes or until you have agravy texture. After you get a gravy texture,it’s ready to serve.
